Super Bowl Sunday is almost upon us. It's a great time to get together with friends and family and enjoy good company and good eats. But it can also be a time when individuals struggle with their nutrition especially when they are trying to stay on task with their health and fitness goals. Not to worry, we can still eat right, eat good foods that taste great and at the same time, fuel the body properly and not end up with a day of train wreck nutrition.

 

 Here is a great Super (burrito) Bowl that will satisfy your cravings for great tasting fuel and still allow you to stay on target with your nutrition. This burrito bowl will fuel your body with the following:

 

  • 329 calories
  • 54% carbohydrate
  • 27% protein
  • 19% fat

 

NOTE: You can use 2oz extra lean ground beef in place of the chicken if you choose and this will provide the following high-octane fuel to your body:

 

  • 366 calories
  • 48% carbohydrate
  • 27% protein
  • 25% fat

 

Ingredients

2 oz Chicken Breast

2 TBSP Guacamole

2 TBSP Salsa

¼ c Onions

¼ c Green peppers

1/8 c 4-Mexican Cheese, Shredded, Reduced Fat

2 c Lettuce, Shredded

¼ c Beans, Black

½ c Brown Rice (cooked)

 

Instructions

Cook rice and beans; prepare chicken, peppers, and onions in a pan with non-stick spray. Place all ingredients in a bowl, top with lettuce, salsa, cheese and guacamole and enjoy!
